Rollin Blue Beer Can Chicken

Ingredients
- 1 whole fryer chicken (2-4 lbs)
- 1 can of beer (I like a citrus IPA in my chicken, but go with your w)
- 3 cloves of garlic (or as many as you want because you can never have too much garlic)
- 2 tbsp Rollin Blue BBQ All-purpose rub
- 1 sprig rosemary
- 5 whole peppercorns
- 2-3 tbsp of your favorite BBQ Rub
- 1-2 tbsp. Olive Oil
Instructions
- Open your favorite beer and take a big sip. I like to use some sort of citrus IPA because the citrus comes though and pairs well with the chicken.
- Start your smoker or grill and get the temp to 225 degrees.Â
- Remove all of the gizzards, neck and other things that come stuffed inside the chicken. Rinse the chicken and pat dry.
- Lightly coat the chicken with olive oil then cover season liberally with the Rollin Blue BBQ pork or all-purpose rubÂ
- Open your beer and take a big sip. Slice the garlic cloves in half and put them into the beer can along with the rosemary & peppercorns.
- On a large cutting board or plate, set the chicken down on top of the beer can with the legs down. When up to 225 °F, place the beer can chicken on the grill grates and use the chicken legs and can to stabilize the bird.
- Smoke at 225 °F until the internal temp of the chicken breast reaches sn internal temp of 140 °F. (It helps to have an wireless meat probe so you dont have to keep opening your grill and you get alerted when the meat is at the perfect internal temperature.)
- Increase the temperature of your grill to 375 °F and continue to cook until the internal temperature of the chicken breast reaches 165 °F.Carefully remove from the grill and let stand for 15 minutes.
- Before you remove the can, make sure it has cooled to the touch, then remove the beer can from the chicken, and serve.
